Here's a delicious alternative for your vegetarian party guests. Trust me though, even carnivores will want to try these!

 1 block Halloumi
 8 mini burger buns (or 8 small bread rolls)
 1 small red onion, sliced
 1 beef tomato, sliced
 1 gem lettuce
 2 tbsp mayonnaise (or Greek Yogurt)
 1 tsp Harissa paste
 2 pickled gherkins

Start by preparing your burger toppings, as the actual cooking time is quick.

In a bowl, mix together the mayonnaise (or yogurt) with the Harissa paste and a small sprinkling of salt and pepper.

Next, slice your beef tomato into 8 slices.

Separate your gem lettuce into 8 leafs.

Slice your red onion in 8 slices.

Slice your gherkins into 16 slices, so you have two slices per burger.

Heat up a griddle pan over a medium heat. There is no need to add any cooking oil.

Slice your Halloumi into 8, or into 16 smaller slices.

Place these slices on the griddle pan and cook for 5 minutes. Flip these slices and cook on the other side for 5 minutes.

Finally, it's time to plate up! I like to put some Harissa sauce on both the bottom and top of the burger bun. Place the lettuce, onion and tomato on top, and then place the cooked Halloumi slices.

Finish with the gherkins and the top of the bun!
