Stay away from prepackaged sausage rolls this year and instead wow your guests with these deliciously addictive Christmas Sausage Rolls! Perfect for a party or as a snack!

 1 Pack of Puff Pastry (Fresh, not frozen)
 1 Pack 12 Butchers grade sausages (minimum 75% pork)
 ½ cup chopped red onion
 1 cup breadcrumbs
 3 Large Medjool dates (or 6 regular dates)
 2 tbsp dried cranberries
 ½ tsp all spice
 1 tbsp chopped fresh sage
 1 egg
 1 tbsp milk

First thing first, preheat the oven at 190 degrees Celsius.

If you have a food processor, you can put the onions, dates, sage and all spice in together and blitz until finely chopped.

If, however, you don't have this device, you can finely chop the onions and dates and put them into a bowl, along with the all spice and finely chopped sage.

Add the breadcrumbs and cranberries and mix until combined.

Now it's time to get messy! Squeeze the sausage meat out of the skins and put into the bowl with the rest of the ingredients. Using your hands, mix everything together until it is all combined.

Next you need to roll out your puff pastry. If you bought the prerolled kind, your job is half done! After rolling it out, cut the pastry in half from the top down. You should be left with two identical long rectangles.

Beat the egg with the milk and, using a pastry brush, lightly brush the edges of both pastry sheets.

Next you need to split your sausage mix in half. Place the sausage mix on the sheet of pastry about 2 inches from the edge on along the longest edge.

Gently lift up the pastry edge closest to the sausage meat and fold this as much as you can over the sausage mix. Don't worry, you should not be able to cover the whole thing. You will now need to gently roll the pastry and sausage meat together, rolling until the sausage mix and has been completely covered with the pastry.

Brush the entire pastry roll with the remaining egg wash and then cut into 1.5 inch smaller rolls. Place on a foil tray or a baking tray lined with grease proof paper and bake in the oven for 35-40 minutes.
